Tri Color Pori Urundai (Indian Flag Inspired)

Wishing everyone a very Happy Independence Day.
My mom and granny used to prepare these pori urundai and few other sweets during Independence day as years passed with many diabetics at home this tradition stopped this independence i wanted to start it all over again and prepared some sweets topping my list Pori Urundai .

Ingredients:
4 Cups Pori/Puffed Rice
1/2 Cup Jaggarey
1/4 Cup Water
Orange and Green Colours
Method:

  • Its always recommended to clean the puff rice before use.
  • Heat a heavy bottom pot I've used a wok on medium flame.
  • Add jaggery and water bring to a boil allow the jaggery to melt using a strainer strain the melted jaggery.
  • Add the strained jaggery back on medium flame bring to boil  place water in a bowl add few drops of jaggery to the water if your able to form pearl consistency then add puffed rice and mix well till the melted jaggery has distributed evenly.
  • Oil hands start forming ladoo shape as soon as possiable if the mixture cools down it will be difficult to form and shape.
  • Allow to air dry a bit till heat has gone store it in air tight container.

  • To add color follow the same steps melt the jaggery add it back on flame then add color and repeat the process of forming ladoo.
  • Since I was giving away these ladoo to kids at a local school near by I prepared a large batch of these.
  • To make them look more attractive I printed out Indian Flag with Gandhi quotes using post it notes and bamboo skewers i secured the flag on skewers.  


  • Once the flag skewers were done I pierced the ladoo on the skewers gifted them to kids the moment i gave them these tricolor ladoo they were so happy and thanked me.

Normally we dont add colors to the recipe since its festive occasion I prepared it in tricolor.

Nutella Banana Turon/Filipino Banana Turon

Something so simple and tasty from the country of Philippines truly amazing recipe everyone at home enjoyed turon and I'm very proud to prepare two amazing and famous and simple recipes from Philippines...:)

Ingredients:
2 Robusta Banana
5 Almonds, 10-15 Pistachios, 10-15 Ground Nuts
Dry Shredded Coconut
2 Tbsp Maida/All purpose flour
Spring Roll Sheets
Nutella
Oil for frying

Prep Up:

  1. Thaw the spring roll sheets ahead of time before use.
  2. Dry roast the nuts on a medium flame allow to cool and chop into fine pieces.
  3. Peel and half the banana cut into two quarter place a damp cloth over the cut banana.
  4. In a bowl mix the maida with 2 tbsp of water and create and smooth paste.
  5. Heat Oil in a wok.
Method:
  • Place a spring roll sheet on a flat surface 
  • Spread nutella a tbsp of nutella on the sheet sprinkle the roasted and chopped nuts sprinkle the grated coconut and place the banana roll into spring roll seal the edges with the maida paste and fry in hot oil.
  • Once the rolls turn light golden in color drain the oil on a paper towel and serve with ice cream...Enjoy...:)

Red Velvet Nutella Mug Cake

Ingredients:
4 Tbsp All purpose flour/maida
3 Tbsp Milk, Oil and Nutella
1/2 Tbsp Red Food Color
1/4 Tsp Baking Powder
1 1/2 Tbsp Powdered Sugar (Optional)
 For Frosting:
1/2 Tub Cream Cheese
3/4 Cups Powdered Sugar
2 Sp Milk (Optional)
1/2 Tsp Vanilla Extract
1 Tbsp Butter
  • Add all the ingredients to a mixing bowl and beat well using a hand blender or a balloon whisk beat well till smooth well combined and fluffy store in a glass container and allow to cool in the refrigerator  before use.
Method:
  •  In mixing bowl add nutella, milk, egg, oil and sugar whisk till well combined.
  • Add the flour and baking powder to the wet mixture and whisk till well combined.
  • Divide the mixture into serving mugs and place in the microwave for 2 to 3 minutes till well done. allow  to cool and decorate with frosting and serve...enjoy...:)

Nutella Chocolate Fondue

This is one of the most easiest and fun loving recipe I've ever made. very simple hot dessert recipe which will never go wrong...if there is leftover fondue it can always be covered and refrigerated and can be reheated and topped for icecream or reused as fondue. just wow your family and friends with this recipe...

Ingredients:
100 Grams Cooking Chocolate 80% sugar
2 Sp Oil
100 Grams Cream
3 Tbsp Nutella

Chocolate fondue can be served with any condiments of your choice...I served with strawberry, vanilla cake marshmallow and orange...
Method:
  1. Any microwave safe bowl can be used for the recipe first of all chop the cooking chocolate and add to the bowl add oil and cream place in the microwave for 30 seconds.
  2. After 30 seconds remove from microwave and give the chocolate a good stir there will be lumps dont worry.
  3. Add nutella and mix the chocolate once more place in the microwave for an additional 30 seconds to melt the chocolate thoroughly.
  4. Constantly keep checking and stirring the chocolate every 10 seconds.
  5. Once the chocolate has melted remove from microwave and give it a good stir.
Serve the chocolate warm with favorite condiments enjoy...:)

Nutella Coffee Pannacotta

Ingredients:
2 Cups Milk please use full fat milk
2 Cups Heavy cream
2 Tbsp Gelatin
3-4 Tbsp Sugar
2 Tbsp Instant Coffee Powder
4 Tbsp Nutella
2 Tbsp Coco powder
Method:
  • In a bowl add the gelatin and add luke warm water and mix allow to melt or place the bowl in the microwave for 30 seconds till gelatin melts.
  • Place a heavy bottom pot on medium flame add 1 cup milk and 1 cup cream bring to a simmering boil add half of the sugar and whisk till sugar dissolves.
  • Mix the coco powder with a bit of luke water or milk in a cup this is to avoid lumps add the coco to the boiling milk and stir using a whisk is much more faster and really helps.
  • Add the nutella and stir till nutella melts and combines with milk thoroughly add half of the melted gelatin and keep stirring till well combined.remove from flame allow to cool a bit before pouring into serving glasses.
  • Once the mixture is divided equally into serving glasses cover with clingwrap and place in the fridge till sets.
  • To prepare the coffee panna cotta add 1 cup milk and 1 cup cream into heavy bottom pot and bring to a simmering boil on medium flame.
  • Add sugar and whisk till sugar dissolves. add the instant coffee and stir well add the remaining gelatin and stir till well combined remove from flame and allow to cool a bit.
  • Divide the mixture equally and layer on the pre set nutella follow the same process and place in the fridge till set.
Garnish with tempered chocolate and chocolate shaving serve with loads of love to your guests and family enjoy

Nutella Black Forest Trifle

Its birthday time @ shankars residence. we don't plan much for birthdays its on a very low key this time of the year dad was feeling bit low I wanted to cheer him up with truffles and black forest trifle he has been a good boy maintaining his diet watching out for his sugars and kept him self fit as possible since his sugars runs low it was okay for him to indulge in some sugary treats did not plan on baking a huge cake but these shot glass treats made it look so fancy and cute all things sweet and cute packed with love comes in small packages...:D

I did the most horrible pipping not an expert in that area more to say patience is not my virtue...lol...but the consistency of double whip cream was super.

Ingredients:
1/2 Liter Milk
2 1/2 Tbsp Coco powder 
200 Grams Nutella Jar
2 Tbsp Corn Flour
4-5 Tbsp Sugar
1 Cup Maraschino Cheery
1/3 Cup Cherry Brandy Optional 
1/3 Cup Sugar Syrup

500 Grams Heavy Whipping Cream
There is a constant question asked how i whip the heavy whipping cream. i never follow the guide lines given by chefs...this is a sure short cut method try it out if your a first timer i must warn you this method can turn totally wrong if you whip the cream too much it can turn into butter in no time please make sure you constantly check the cream if its formed stiff peaks or not.
  1. Use a steel bowl.
  2. Freeze the bowl and the whipping blades.
  3. Make sure the heavy whipping cream is frozen too.
  4. Add the whipping cream to the bowl and whip on low first then turn to high mode and whip for 10 to 15 minutes till stiff peaks form.
Prep up:
  1. Chop the maraschino cherry and reserve in a bowl soak the chopped cherry with sugar syrup and cherry brandy for at-least 1 hour. adding cherry brandy to the dessert is traditional if you want to avoid the brandy please do it...my self on the other hand avoided adding sugar syrup and brandy keeping my dads sugars in mind...:P
  2. Mix together the cornflour and coco powder with enough water till there are no lumps.
  3. Bring the milk to a rapid boil lower the flame.add the sugar and stir. gently keep stirring and pour the coco mixture keep stirring till the milk thickens and form a custard consistency remove from flame and strain  using a sieve make sure there are no lumps in the custard allow to cool a bit.
  4. When the custard is lukewarm add the entire jar of nutella and mix well till well combined cover and place in the fridge till chill.
  5. Prepare the nutella cake allow to cool crumble and reserve in a bowl.
  6. Whip the heavy whipping cream and place into a pipping bag.
Ready to assemble: 
  • In a serving glass or bowl add the chilled custard to the bottom fill till 1/3 level add the crumble cake in the next layer spoon out the cherry and finally top with the whipping cream and decorate with a cherry.
 Serve right away ...enjoy...:)

Nutella truffles

I made these truffles for daddy's birthday. He loved them so much the crisp chocolate covering on top and crunchy truffle inside made it to the spotlight the entire batch of truffles vanished in no time. the choice was good I've used Mocha flavored chocolate chip biscuits the slight bitter taste from the coffee made a real good difference to the entire recipe. However people who like bitter taste can add 2tbsps instant coffee to the mixture.

Ingredients required:
2 Tbsp Nutella
1 Tbsp Semi Sweet Chocolate Chips
1 Tsp Dalda or butter
2 Packets of Hide & Seek

200 grams of Dark chocolate
1 Tbsp of Dalda

to decorate: sprinkles, grated coconut or coco powder


  • Crush the biscuits and add to a coffee grinder pulse twice till ground to a coarse powder consistency.
  • Add the chocolate chips and 1 tsp of butter to a micro safe bowl and place in the microwave for 30 sec or until the chocolate has melted.
  • Add the nutella & melted chocolate to the cookie crumbs and mix well till a dough consistency has formed.
  • Cover the mixture and refrigerate until the mixture is set.
  • Take small portions of the dough an form equal size truffles and freeze them till firm consistency.  


  •  Add the dark chocolate and 1 tbsp butter to a micro safe bowl  microwave until thoroughly melted it took me 1 minute to melt the dark chocolate and kept stirring the chocolate in every 30 sec interval make sure the chocolate doesn't burn in the process. at times the chocolate will get burnt instantly when we use a microwave.
  • Add a tsp of oil in the plate and set aside.
  • Take the frozen truffles and dip them in the melted chocolate using a fork
  • Place the truffles on a greased surface decorate with sprinkles or shredded coconut and refrigerate until set. 
Serve the truffles in room temperature...Enjoy...:)

Tiranga Panna Cotta (Indian Flag Inspired)

1/2 Liter Milk
1/2 Tin Sweetened Condensed Milk
1 Tbsp Gelatin or  Agar Agar
1/2 Tsp Vanilla Essence
Pinch of orange and green food color

Adding CMC is upto you normally in hotels they add the cmc for all custard and cream based recipe to give a fluffy lite texture i did not add CMC since i did not use whole cream in my recipe rather choose to use healthier version just used condensed milk.

  • Soak gelatin in 1 Cup water and allow to rest for 10 minutes.
  • Boil milk in a heavy bottom pot add condensed milk and keep stirring on a low flame.
  • Place the gelatin in the micro wave and melt for 30 seconds or use a double boiler and melt the gelatin.
  • Once the milk starts to boil add the gelatin and stir well allow to boil for 10 minutes.
  • Add Vanilla essence and stir well.
  • Divide the milk into 3 equal portions.

  • Add the green food color to one portion and orange food color to other milk well.
  • In a cupcake mould or any other mould add the orange layer first place the mould in the freezer for 10 to 15 minutes till set. 
  • Place the other 2 portion in a pot filled with hot water make sure the other 2 portions remain warm.
  • Once the first layer is set add the white layer and place in the frezeer till set and add the final layer allow to set before serving.
Serve the pannacotta with fruits or chocolate sauce Enjoy...:)
