Basil Chutney + Basil Salami Cheese Toast/Tulsi Thuvaiyal

As per Indian myth basil is considered to be auspicious we consider basil to be really holy in india tulsi is so secred from birth till death tulsi/basil is used in our homes...as per ayurveda tulsi has many properties the few which i know are its good for common cold flu digestion heart aliments liver related aliments and skin diseases and many more...
After all that gyan I feel hungry for more basil toast turned out really good yaar...you people need to try my side of Italian pesto converted to our style chutney I'm getting better or rather say excellent with my kitchen experiments... superb when served with hot steaming rice roti or dosa...can be stored upto 3 days in the fridge...perfect treat for winter...

Ingredients:
1 Medium Size Bell pepper
4 Green Chilies 
1/2 Onion
4 Pods Garlic
2 Fist Full Basil leafs/Tulsi
10-15 Almonds
10 Walnuts
1 Tsp Cumin Powder
1 Tsp Lime juice
Salt as per taste
2 Tbsp Olive Oil
  • Pick out all the old leafs and wash the basil thoroughly before use. 
  • Heat a wok with oil on medium flame add the garlic chilly and fry a bit add the onion and fry till transparent.
  • Add the bell pepper and fry on low flame add the almonds and walnuts and allow the bell pepper to cook a bit.
  • Add the basil and fry.
  • Allow all the ingredients to cool before grinding.
  • Add all the ingredients to amixerjar add cumin lime juice and salt and grind with out adding any water.
Serve right away with rice or roti...enjoy...:)

Cheese Singles
Basil Chutney
Bread
Salami
Butter

  • Spread a dollop of chutney on the bread slice layer with salami and cheese spread chutney over the second slice and place over a hot tava add butter and toast till both sides turn light golden in color...serve hot with cafe latte and enjoy...:)

Besan Masala Toast



You can use any bread for this recipe whole wheat bread is very tasty and healthy for this recipe. recently I purchased soya bread from my local bakery i did not like the taste it was healthy but not to my liking  however i did not want to waste the loaf of bread i prepared this masala toast it was a hit we loved it i will be preparing this masala toast with soya bread here onwards. How ever I've used regular salt bread for the recipe shown. ragi bread is packed with protein diabetic patients can prepare masala toast with ragi bread even athletic people can try this recipe with soya, ragi or wheat bread. you can prepare this recipe for breakfast or tea time snack its simple easy to prepare no fuss everybody will like it. I've shown a very simple way of preparation in my demo video you can use a sandwich toaster grill if you have one at home many people dont have a grill toaster at home so I've shown the recipe using tava / iron skillet the regular conventional style...:)

Ingredients:
A loaf of plain salt bread
1 Cup Besan / Gram flour
4 Tbsp Rice flour
1 Sprig Curryleafs (finely chopped)
2 Tbsp Coriander leafs (finely chopped)
4 Green Chillies (finely chopped)
1 Small Onion (finely chopped)
1/4 Tsp Chilly Flakes
1/4 Tsp Cumin Powder
1/4 Tsp Baking Soda
1 Pinch Asafoetida
Oil for frying
Salt to taste


Lets Prepare:
In a large mixing bowl add all the ingredients besan flour, rice flour, onion,cumin powder, chilly flakes,baking soda, curry leafs, coriander leafs, green chillies, asafoetida and salt mix all the ingredients well add water and prepare a batter allow to rest for 10mins. Heat a tava or iron skillet on medium flame add 1 tbsp of oil mix the batter once before dipping the bread in the batter. once the tava or skillet is hot dip the bread in the batter the batter should coat either sides of the bread well fry the bread toasting either sides of the bread well serve hot with ketchup...Enjoy ...:)

Tip: 
Sift the besan flour and rice flour before preparing a batter.
Use a whisk while preparing the batter.

Tomato Masala Cheese Toast

Ingredients:
A loaf of Bread
2 Large Onion's Cubed
2 Medium Tomatoes cubed
2 Green Chilly cut into pieces 
5-6 Curry leafs
1 Tsp Coriander Powder
1 Tsp Chilly Powder
1/2 Tsp Turmeric Powder
1 Tbsp Ginger & Garlic paste
 Oil
 Butter
Cheese singles
Salt to taste.

Lets Prepare :

  • Heat a wok and add 2 tbsp oil fry in the ginger & garlic paste fry a bit and tip in the onion and green chillies fry add 1/2 tsp of salt and allow the onion to change into pink color. tip in the chilly powder, coriander powder and turmeric powder and fry for a sec tip in the tomato and fry  check for salt and adjust to your taste allow the oil to separate from the masala and remove from flame.
  • Heat a tava or a pan and place the slice of bread and spread the tomato masala and layer with cheese single cover with another slice of bread and add 1/2 tsp of oil to either sides and toast well and serve hot with fried egg or ketchup. you can also use a toaster and toast the bread....try it your self you'll love it....Enjoy...:)

Bread Upma


A Loaf of Bread (Plain salt bread)Cut the bread into small pieces
2 Large Tomatoes
2 Large Onions
2 Tbsp of Coriander
2 Tbsp of Mint
4 to 5 Green Chilles
1 1/2 Tsp Ginger and Garlic paste
1/2 Tsp Turmeric
1 Bayleaf
2 Inch Sticks of Cinnamon
3 Pods Cardamom
3 to 4 Cloves
6 Tbsp Oil 
1 1/2 Tsp salt
1 Lemon


Heat a wok add oil temper with bay leafs,cloves,cardamom and cinnamon add onions fry add ginger garlic paste fry add chillies fry add tomatoes fry add turmeric powder and salt and fry well till the oil leaves the masala reserve half the masala and add half the amount of bread to the masala and mix well add the rest of the masala and add the rest of the bread and mix well this way the masala will distribute well and even in the bread try to cover and fry for 3 to 4 mins it will give better taste garnish coriander and mint along with lime juice mix well serve hot ...enjoy...:)
  • Tips:
  • Kids will love this dish you can reduce the amount of spices that I've added 
  • You can add even scramble eggs before mixing the bread into the masala 
  • Instead of chillies you can add bell peppers 
  • Rather than using whole spices try and use garam masala   
This recipe is a tribute to my grand ma I miss you Padma paatti.
she always used to prepare bread upma for me before going to school or pack some for school and she always used to feed me yogurt  before going to school...I felt very sad for loss of my grand parents they have inspired me in many ways I wish if they were still alive to see me pass on their nourishment wellness kind heart and thoughts to others...my message to young generation is not to tease your elders give respect and learn more from them to pass on to your generation if you have grand parents spend time with them instead of playing computer games and watching television atleast spend 1/2 hr time with your elders their blessings and support are important in future God bless you ....:)
