Red Bell Pepper Chutney


I've used red bell pepper instead of tomato in this chutney its a nice twist and cool combo when served along with egg dosa.

1 Large Red Bell Pepper(Roughly Chopped)
1 Large Onion(Roughly Chopped)
3 Cloves Garlic
5 to 6 Dried Red Chilly
1 Tbsp Split Black Gram Dal
Pinch Asafoetida
Small Piece Tamarind
Salt as per Taste
2 Tbsp Oil
  • Heat a wok on medium flame with oil temper add asafoetida to the oil and fry a bit add black gram dal and chillies and fry a bit add the chopped onion garlic and bell peppers and fry till onion and peppers wilt down a bit then add to a mixer jar add salt and a splash of water and grind to a smooth chutney serve along with egg dosa enjoy...:)

Basil Chutney + Basil Salami Cheese Toast/Tulsi Thuvaiyal

As per Indian myth basil is considered to be auspicious we consider basil to be really holy in india tulsi is so secred from birth till death tulsi/basil is used in our homes...as per ayurveda tulsi has many properties the few which i know are its good for common cold flu digestion heart aliments liver related aliments and skin diseases and many more...
After all that gyan I feel hungry for more basil toast turned out really good yaar...you people need to try my side of Italian pesto converted to our style chutney I'm getting better or rather say excellent with my kitchen experiments... superb when served with hot steaming rice roti or dosa...can be stored upto 3 days in the fridge...perfect treat for winter...

Ingredients:
1 Medium Size Bell pepper
4 Green Chilies 
1/2 Onion
4 Pods Garlic
2 Fist Full Basil leafs/Tulsi
10-15 Almonds
10 Walnuts
1 Tsp Cumin Powder
1 Tsp Lime juice
Salt as per taste
2 Tbsp Olive Oil
  • Pick out all the old leafs and wash the basil thoroughly before use. 
  • Heat a wok with oil on medium flame add the garlic chilly and fry a bit add the onion and fry till transparent.
  • Add the bell pepper and fry on low flame add the almonds and walnuts and allow the bell pepper to cook a bit.
  • Add the basil and fry.
  • Allow all the ingredients to cool before grinding.
  • Add all the ingredients to amixerjar add cumin lime juice and salt and grind with out adding any water.
Serve right away with rice or roti...enjoy...:)

Salami
Butter

  • Spread a dollop of chutney on the bread slice layer with salami and cheese spread chutney over the second slice and place over a hot tava add butter and toast till both sides turn light golden in color...serve hot with cafe latte and enjoy...:)

Mint Chutney for chaats or kababs



This is a very simple mint chutney which can be prepared in no time we can preserve this in the refrigerator for upto a weeks time good for chaats and great dip for kababs and other snacks. 
Ingredients:
1 Bunch Mint leafs
1/2 Bunch Coriander leafs
1 Tsp Cumin Powder
5 Cloves Garlic
12 Green Chilies
Salt to taste
Lime juice is optional
  • Wash the mint and coriander atleast 3 to 4 times.
  • In a mixer jar add the mint coriander, chilies, garlic, cumin power and salt and grind to a smooth paste add water if needed.
  • Best served fresh for kababs and chaats.

    Mint was also often used as an air freshener and was placed in the rooms of houses, synagogues and temples to clear and freshen the air and rid the smell of unpleasant odours from the room. The Greeks and the Romans used mint as a perfume and a bath scent, as well as using it in medicine and in cooking.

    Mint contains a number of vitamins and minerals, which are vital to maintain a healthy body. Mint is rich in Vitamins A and C and also contains smaller amounts of Vitamin B2. Vitamin C is an important antioxidant and may help to decrease the risk of certain cancers such as colon and rectal cancer. Although mint may be consumed in small quantities, the vital nutrients obtained are still beneficial to one's health.

    Mint also contains a wide range of essential minerals such as manganese, copper, iron, potassium and calcium.

    Mint is also said and in many cases proven to:
    Relieve symptoms of indigestion, heartburn and irritable bowel syndrome by relaxing the muscles in and around the intestine.
    Act as a powerful antioxidant, protecting the body against the formation of cancerous cells.
    Inhibit the growth of many different types of bacteria and fungus.
    Ease and unblock the breathing and respiratory passages and airways.
    Relieves the symptoms of colds and flu.
    Mint can help with nasal allergies.
    It can relieve congestion, head colds and headaches.
    Act as a mild sedative and has calming properties.
    Relieve minor aches and pains such as muscle cramps and sprains.
    Combat bad breath.
    Provides a cooling sensation to the skin and can help to treat minor burns, itching and skin irritations.
    Mint is a very good cleanser for the blood.
    Mint tea can help clear up skin disorders such as acne.

    Tamarind Chutney

    This is my version of tamrind chutney normally I prepare in bulk and preserve for 3 to 4 weeks best chutney to preserve...its best to prepare this chutney ahead of time...this chutney is not only used for chats I sometimes use this for seasoning few recipes you will get to see in my upcoming blogs and videos...:)
    Ingredients:
    Tamrind Lemon Size
    1 1/2 Tbsp Chilly Powder
    1 Tsp Carom seed/Ajwain Powder
    1 Tsp Chat Masala
    5-6 Dry Dates
    Jaggery double the amount of tamarind
    1 cup water
    Salt as per taste
    • In a microwave safe bowl add water, dates, tamarind and salt microwave for 2minutes.

    • To the cooked tamarind add jaggery and allow to soak in warn water for 10 minutes.

    • Remove the seeds from tamarind and dates add  the tamarind and dates to a mixerjar and grind to a smooth paste.
    • Mix the smooth paste to the tamarind water and sieve the mixture.


    • Heat a wok and transfer the mixture to the wok allow the mixture to boil on a low flame.
    • Add the dry ingredients chilly powder, carom seed powder and chat masala  to the tamarind once it starts to boil allow to reduce a bit.
    • Allow the mixture to cool before storing  in a tight container.

    Mullangi / Radish Chutney

    Ingredients:
    1 Medium Radish (peeled and cut into tiny pieces)
    1 Fist Full Mint Leafs
    1 Fist Full Coriander Leafs
    1 Fist Full Curry Leafs
    1/3 Cup Yogurt
    3 Pods Garlic
    1/2 Inch Ginger
    1 Tbsp Cumin
    2 Green Chillies
    1 Tbsp Salt
    1 Tsp Lime Juice

    Lets Prepare:
    In a mixer blender we need to add the above ingredients adding very little water to grind into a smooth paste and we can serve this super simple chutney with any kebabs or fish fry its so simple even a 3year old can prepare this chutney in no time just kidding try this recipe and post your comments...Enjoy...:)


    I Love Love Love this Chutney its simple, easy, super tasty and very affordable for a lazy goose like me...lol...people who enjoy barbeque's or any grills will 100% enjoy this chutney as dip for their kebabs and grills. I've once had this chutney as dip for toast trust me i enjoyed every bit of that toast i can practically use this dip for any chips...wafers...grills I've tried this chutney out with several options :P thank god it works...:P.     Coconut & Mint Chutney

    Ingredients:
    2 Cup mint
    1  Cup curry leafs
    1/2 Cup coriander leafs
    3 Green chillys
    1 Inch piece Ginger
    1/2 Cup coconut (fresh)
    Small piece tamarind
    salt to taste



    For the tempering:
    1/2 tsp Mustard seeds
    1/2 tsp Black gram dhal
    2 Dry red chillies
    1 Pinch hing(Asafoetida)
    1 to 2 Springs Curry leafs


    Preparation:
    Heat a wok and add a tsp of oil fry the curry leafs mint and coriander along with ginger and green chilly allow the leafs to wilt and reserve in a platter and allow to cool...in a mixer grinder add coconut tamarind salt and grind well then add the fried mint and other ingerdients to the blender and grind well adding little water reserve to a serving dish....in a fry pan add 2 tbsps oil and temper the mustard seeds black gram chillies along with asafoetida then add the curry leafs and temper the chutney serve...this chutney ia very tasty with bread , roti or any dish your just have it with rice as well superb ac-compliment do try this recipe and post your comments...enjoy...:)
